Latte art as moral philosophy
If the foam sighs, start over. Heart or nothing.
Foam Fennec will remake a flat white if the rosetta looks like a fern from a sad office. Microfoam is not decoration. It is a texture that either holds a heart or confesses you rushed the pitcher.
Milk stretched too far is a cappuccino wearing a flat white’s coat. The Fennec can hear it. 60°C, pitcher close to the cup, a last curl of steam: this is the moral argument. You can drink the fern. You should not serve it.
Latte art is often mocked as barista vanity. It is also a diagnostic. If the canvas is glossy and the pour is honest, the drink is integrated. If the foam is bubbles and the heart collapses, the milk was a lie.
Heart or nothing is a joke until you have watched someone throw a perfectly drinkable cup at the sink for a leaf that leaned left. Then it is still a joke. Then you start over.
